Today, approximately 70 percent of foodborne illnesses are caused by microorganisms. In this context, rapid freezing techniques (IQF – Individual Quick Freezing) used in the processing of frozen foods minimise the risk of bacteria and pathogens by quickly lowering the core temperature of products to -18°C. The European Food Safety Authority (EFSA) reports that this method prevents the spread of dangerous microorganisms such as Listeria monocytogenes by 90 percent.
As Strong as the Cold Chain: Digital Tracking of the Cold Chain…
One of the most important factors in maintaining product quality for frozen products is the uninterrupted continuity of the cold chain. By 2025, many producers will be able to digitally track the entire logistics process of frozen products from farm to table using RFID tagging and IoT-enabled temperature sensors. According to a study published by Harvard University, such systems reduce the risk of spoiled products by up to 45 percent.

The United Nations Food and Agriculture Organisation (FAO) and the Codex Alimentarius Commission are preparing to redefine the minimum quality and safety criteria to be applied in the international trade of frozen foods. In Turkey, the Ministry of Agriculture and Forestry plans to publish a separate storage and shelf life guide for frozen products in the second quarter of 2025, in addition to the TS EN ISO 22000 and HACCP systems.

According to 2024 data from research firm Innova Market Insights, 78 percent of consumers pay attention to product safety certifications when purchasing frozen food. Labels such as ‘organic certified,’ ‘gluten-free,’ ‘GMO-free,’ and ‘traceable source’ directly influence consumer preferences.
