In Türkiye, ayran (Diluted salted yoghurt drink) continues to be one of the key products of both traditional consumption habits and industrial production.

According to data from the Association of Packaged Milk and Milk Products Manufacturers (ASÜD), an analysis of production figures for recent years reveals a steady growth trend for ayran and kefir (Fermented milk drink with a sour taste, made using a culture of yeasts and bacteria). Ayran and kefir production, which rose to 830,000 tonnes in 2023, recorded significant growth in 2024, reaching 960,000 tonnes, an increase of approximately 16% over the previous year. In 2025, ayran and kefir production soared by over 9 percent to 1 million 50 thousand tonnes. These figures show that ayran and kefir production has been on a steady upward trend in recent years and that the sector continues to grow.

The steady growth in production is linked to strong domestic demand for fermented milk products and a surging shift towards value-added products in the dairy industry. The dairy products sector in Türkiye has shown remarkable development in recent years in terms of both production and product diversity.
