Kars province, with its vast pastures and highlands, rich vegetation and strong livestock infrastructure, is one of Türkiye’s most important centres for milk and dairy product production. Approximately 19,000 tonnes of geographically protected kashar and gruyere cheeses are produced annually in Kars region.

In the province, where kashar cheese has been produced since the early years of the Republic, traditional methods are preserved while registered cheese production continues in modern facilities.

In Kars, where animals graze in the highlands with rich vegetation from the spring season onwards, fresh milk from cows is transported to dairies in tanks.

In the province, where various types of cheese, primarily registered gruyere and kashar, are produced after processing in facilities, there are 66 milk and dairy product businesses.

The teams from the Provincial Directorate of Agriculture and Forestry are continuing their inspections and also managing the process of registering Kars kashar and gruyere cheeses with a European Union geographical indication, all with the aim of increasing their brand value…
